Kaynar
A warm spice infusion with galangal, ginger, cinnamon and cloves, topped with walnuts. In Adana, kaynar is associated with visits celebrating a new baby. That cultural association does not establish a medical or lactation benefit; this is a culinary serving recipe.
Tie spices in clean food-grade muslin, leaving room for water to circulate.
Bring water and sugar to a simmer. Add the bag and simmer gently 45 minutes; add water as needed to maintain roughly the starting volume.
Remove the spice bag and strain any loose pieces. Divide between heatproof glasses, top with walnuts and let cool until comfortable to sip.
