Patatesli Omlet
Tender golden potatoes and softly set eggs come together in this simple skillet breakfast. Cook the potatoes through first, then finish the omelet gently under a lid.
Peel the potatoes and cut into even 1/4-inch cubes. Pat dry. Have a 9-inch nonstick skillet with a lid, a bowl, a fork and a flexible spatula ready.
Small, evenly cut cubes cook through before the eggs are added.
Heat the olive oil in the skillet over medium heat. Add the potatoes and spread into an even layer. Cook for 12–15 minutes, turning regularly, until tender all the way through and lightly golden. Reduce the heat if they brown before softening.
A fork should enter the largest potato cube easily, with no firm center.
While the potatoes cook, beat the eggs with the salt and black pepper until the whites and yolks are fully combined.
No separate streaks of egg white remain.
Reduce the heat to low. Spread the potatoes evenly and pour over the beaten eggs. Tilt the pan gently to fill the gaps. Cover and cook for 6–8 minutes, until the top and center are set. If needed, continue over low heat until no liquid egg remains.
The center is firm rather than flowing when the pan is gently tilted.
Remove the lid and loosen the omelet around the edge and underneath with the spatula. Slide onto a plate, or carefully invert onto a plate to show the golden underside. Cut into wedges and serve hot.
The omelet holds together; the potatoes are soft and the egg is fully set.
