Kayseri Dolazı
Kayseri’s finely textured flour-and-molasses dessert, cooked with butter and spread on a shallow dish. Served warm with walnuts, it is a simple sweet for winter evenings.
A heavy-bottomed pan helps the flour toast evenly without catching during continuous stirring.
Put the butter and flour in a heavy-bottomed pan. Cook over low heat, stirring continuously, until the flour turns light golden.
While the flour cooks, mix the water and grape molasses in a bowl.
Add the molasses mixture gradually to the toasted flour, stirring briskly as you add it.
Continue stirring until the mixture thickens into a soft, cohesive paste that holds its shape.
Transfer to a shallow serving dish and smooth with the back of a spoon. Make shallow spoon marks toward the center if desired, add chopped walnuts at the center, and serve warm.
Keep stirring while the flour toasts. Add the molasses mixture gradually and stir briskly to avoid lumps. The finished dolaz should be soft enough to spread with a spoon and thick enough to keep the spoon marks.
