Afyon Bükmesi (mercimekli)

Thin, folded Afyon pastries filled with green lentils and onion, with olive oil and yellow poppy paste between the layers.

Method

  1. Put the lentils and their measured boiling water in a saucepan. Simmer for 15–20 minutes, until tender, allowing longer if needed. Drain.

  2. Cook the diced onion in the filling olive oil over medium heat until softened and beginning to color. Add the lentils and cook together for 1–2 minutes, then remove from the heat and let cool.

  3. Mix the poppy paste with its olive oil until evenly combined.

  4. Combine the flour, dough olive oil, vinegar, table salt and baking soda. Add the dough water gradually and knead to a soft dough that is slightly tacky; judge the texture as the flour hydrates.

  5. Divide into 2 equal pieces and roll each into a 12-inch round. Reserve a tablespoon of the poppy mixture for the tops and spread the rest over the two rounds. Fold the first round in from its four sides to form an envelope. Set it on the second round, fold that around it in the same way, and refrigerate the bundle for 45 minutes.

  6. Grease a baking sheet with olive oil and preheat a conventional oven to 375°F. Cut the chilled bundle into 4 equal pieces, then cut each into 3 pieces to make 12. Roll each into a 3¼-by-4¾-inch rectangle.

  7. Place 2 tablespoons of lentil filling lengthwise in the center of each rectangle. Fold the two short sides over so they overlap. Arrange on the sheet, brush with the reserved poppy mixture and bake for 20–25 minutes, until the pastry is cooked and golden.

  8. Remove from the oven and serve warm or after cooling.
