Silivri Yogurt
Firm, cream-top yogurt from Silivri, with a thick, uneven cream layer over a dense, slightly yellowish set.
Last updated:
Silivri yoğurdu is a regional set yogurt made with local cow’s, sheep’s or water-buffalo milk, or an equal blend of cow’s milk with sheep’s or water-buffalo milk. Extended heating and a second cream-forming heating stage create its characteristic surface. It sets and is sold in glass or earthenware containers; it is not strained yogurt with cream stirred in.

Types & forms
Cream-top set yogurt
The dense yogurt and its thick cream surface form in the container. Preserve the top when serving if you want both textures.
Milk-specific varieties
Cow, sheep, water-buffalo and the specified mixed-milk versions differ in fat and composition. The surface alone cannot identify the milk source.
What to look for when buying
- Read the full product name, Silivri origin and milk ingredients on the label. A generic cream-top yogurt is not automatically Silivri yoğurdu.
- Choose a sound, covered container kept refrigerated; follow its use-by and storage instructions.
Prepare & cook
- Use a clean spoon to lift a portion through the cream layer into the set yogurt underneath.
- Serve plain to appreciate the two textures, or use it in a dish that calls for an unstrained yogurt of this richness.
- If a recipe needs a smooth sauce, stir the portion you need; stirring changes the intact cream-top presentation.
Store it well
- Keep refrigerated and return the covered container to the refrigerator after serving.
- Follow the producer’s after-opening and use-by instructions; use a clean spoon rather than adding food or used utensils to the pot.
Substitutions depend on the dish
Plain unstrained yogurt
It may suit a sauce or cooked dish when its fat and texture fit, but lacks the distinctive cream layer and regional identity.
Strained yogurt
Its concentrated texture is different. It is not a direct replacement for an intact serving of cream-top set yogurt.
Nutrition
Milk source and permitted blends give different fat and nutrient profiles; use the producer’s label for the yogurt you buy.
At the Turkish table
Silivri’s yogurt-making tradition supplied Istanbul by sea. The firm set and resilient cream layer are defining features of this local food.
