What to look for when buying

  • Buy a sealed in-date packet marked instant baker’s yeast.
  • Check whether it is intended for ordinary lean dough or specialized sweet dough.
  • Read the actual ingredient and allergen label; some instant yeasts include an emulsifier, vegetable oil or ascorbic acid.
  • Buy instant yeast, not baking powder, nutritional yeast or active dry yeast. A typical US packet contains 7 g (2¼ tsp); a Turkish instant yeast packet commonly contains 10 g. Our kitchen amounts name the local product; check your packet and follow the recipe’s dough and rise cues rather than a timer alone.

Prepare & cook

  • Weigh accurately and follow the packet for mixing and liquid temperature.
  • Judge the dough’s rise as well as elapsed time. Never taste raw flour dough.

Store it well

  • Store unopened packets as labeled.
  • Protect opened yeast from moisture and follow the maker’s refrigeration or freezing instructions.

Substitutions depend on the dish
