Yogurt-marinated chicken thighs grilled with peppers and served on warm lavash.

Method

  1. Mix yogurt, oil, tomato paste, garlic, spices and salt. Coat the chicken; cover and refrigerate for at least 2 hours or overnight. Do not wash raw chicken.

  2. Thread chicken and pepper pieces onto metal skewers without packing tightly. Discard the used marinade; wash hands and equipment that touched raw chicken.

  3. Heat a grill or grill pan. Cook the skewers for 12–15 minutes, turning regularly and lowering the heat if the marinade scorches. Grill tomatoes separately with clean utensils.

Check several thick chicken pieces: the center must reach 165°F. Continue cooking as necessary.

  4. Rest the cooked skewers on a clean plate for 3 minutes. Toss onion with sumac and parsley; serve with the grilled tomatoes and warm lavash. Refrigerate leftovers promptly, within 2 hours or 1 hour in temperatures above 90°F.

Cooking guidance

Use flat metal skewers and leave small gaps between pieces. The chicken is ready when a thermometer confirms the center temperature, not simply when the outside is browned.
