Smooth chickpeas blended with tahini, lemon and garlic, finished with olive oil and red pepper.
Reserve a few chickpeas. Blend the remainder with the tahini, lemon juice, garlic, cumin and salt in a food processor. Stop and scrape down the sides as needed.
With the machine running, add the cold water gradually, stopping when the dip is smooth and spreadable. The amount needed depends on the chickpeas and tahini.
The dip holds a soft swirl but is not stiff or grainy.
Spoon onto a shallow plate. Make a dip in the center, drizzle with the olive oil and add the reserved chickpeas, a little pul biber and parsley. Serve promptly or cover and refrigerate.
Start with cooked chickpeas; the preparation time does not include cooking dried chickpeas. Keep a few of the measured chickpeas aside for the topping.
