Types & forms

White wine vinegar

Check the named base and stated acidity.

A different product; do not infer identity from clear color.

What to look for when buying

  • Choose a food-grade product explicitly labeled white wine vinegar.
  • For preserving, use exactly the vinegar type and acidity required by a tested recipe.
  • Check the label for sulphites and other added ingredients; the example nutrition product contains sulphites.

Prepare & cook

  • Measure the recipe quantity for dressing or poaching water.
  • Taste dressings before adding more; do not alter a preserving recipe’s acid by guesswork.

Store it well

  • Keep the bottle closed and follow the manufacturer’s storage directions.
  • Use clean utensils and do not return leftover dressing to the bottle.

Substitutions depend on the dish

A different vinegar

May suit a dressing with a changed flavor, but is not an automatic substitute in food preservation.
