Tarhana soup mix

Dried wheat-and-yogurt tarhana thickens into a tangy soup when mixed with liquid and cooked. Break up lumps early and stir as it heats; the dry mix, seasoning and final thickness vary between makers.

Types & forms

Dry granular soup mix

The form used by the linked soup; it must be hydrated and cooked. Ingredients and grain size can differ.

Wet tarhana or regional sheets

Different moisture or structure; their quantities and preparation cannot be transferred unchanged.

What to look for when buying

  • Read the ingredients for wheat, yogurt, salt and any vegetables or spices. The name alone does not tell you the exact recipe or allergen list.
  • Choose thoroughly dry mix in clean, intact packaging, without damp clumps, mold or infestation. Ask an unpackaged seller about ingredients and storage.

Prepare & cook

  • Disperse the measured tarhana in the liquid as the linked recipe directs, breaking up clumps before they set in the hot soup.
  • Stir across the bottom as the soup heats and thickens. Taste before adding extra salt because the dry mix and stock may already contain it.

Store it well

  • Keep dry tarhana sealed, cool and dry; use a clean, dry spoon. Do not mix a damp or spoiled portion into fresh mix.
  • The prepared soup needs chilled storage appropriate to cooked food. Do not treat fermentation or drying of the starting mix as permission to leave the finished soup warm.

At the Turkish table

Türkiye’s tarhana traditions include differing grains, yogurt proportions and shapes. The linked soup uses a dry wheat-yogurt mix; it does not claim to represent all regional versions.
