Types & forms

Plain carbonated

Water with dissolved carbon dioxide; check added minerals.

Sparkling mineral water

Mineral content depends on its source.

Club soda · comparison

May contain added mineral salts; the nutrition reference identifies this form.

What to look for when buying

  • Choose unflavored unsweetened water in a sealed bottle.
  • Check sodium and added salts; sparkling does not specify mineral content.

Prepare & cook

  • Chill before making the mussel batter and open close to mixing.
  • Fry promptly after mixing as directed; do not taste raw batter.

Store it well

  • Store sealed bottles as labeled, away from heat.
  • Cap and refrigerate after opening to retain carbonation.

Substitutions depend on the dish

Still water

Lacks carbonation and can change the coating. Use a batter recipe written for it.

Tonic

Often contains sugar or sweeteners and other flavorings; not a neutral replacement.
