Pistachio kernels (unsalted)

Plain kernels for chopping or grinding; distinguish raw and roasted products before choosing.

Last updated:

This guide concerns unsalted shelled pistachio kernels. The recipe identity does not specify raw or roasted, so check the method and product label. Antep fıstığı is the Turkish ingredient name here, not certification that every package was grown in Gaziantep.

Types & forms

Raw unsalted kernels

Unroasted kernels, shown in the picture. Nutrition below labels raw and dry-roasted reference values separately.

Dry-roasted unsalted kernels · comparison

A different preparation with a toasted flavor; reference nutrition differs from raw kernels.

Salted, sweetened or in-shell · comparison

Additional salt, coatings or shell weight make these different purchasing and measuring choices.

What to look for when buying

  • Choose shelled and unsalted if the recipe requests that form. Check whether the kernels are raw or roasted instead of inferring it from color.
  • For a fine dessert topping, plain kernels can be chopped or ground. A sweet pistachio cream is not a substitute for the same weight of nuts.

Prepare & cook

  • Check for shell fragments, then chop to the texture the recipe needs. For fine crumbs, pulse briefly so the kernels do not quickly become a paste.
  • Choose raw or roasted according to the method. Toasting for flavor is not a validated home treatment for a recalled or contaminated product.

Store it well

  • Seal tightly and protect from heat, light, moisture and strong odors. Refrigerate or freeze for longer keeping, following the package directions.
  • Discard visibly moldy or rancid-smelling nuts; do not rely on color or smell to clear a recalled product.

Substitutions depend on the dish

Walnuts or other nuts

Flavor, color, texture and allergens change; use a recipe variation written for the chosen nut.

Pistachio paste or cream

Sugar, oil and texture may differ substantially. It cannot replace chopped kernels by equal weight without reformulating the dish.

Raw edible kernels per 100 g, without hard shells; not a claim that the linked recipe requires raw rather than roasted nuts. Values are rounded for readability; “not reported” does not mean zero. A “<” value is below the source’s measurement limit.

At the Turkish table

Unsalted pistachio kernels appear in this collection’s künefe, güllaç and ekmek kadayıfı, and in the cheese-and-herb meze Girit ezmesi. Their use in both sweet and savory dishes is a reason to check the recipe’s required texture and roasting, rather than buying a sweetened pistachio cream.
