The Turkish pantry

Oregano (dried)

A robust dried leafy seasoning; check the herb identity rather than relying on the word kekik alone.

Last updated:

This guide concerns plain dried oregano leaves. Oregano, thyme and mixed za’atar seasonings are distinct products even when regional common names overlap. The dried flakes are a seasoning, not an essential oil or extract.

Small irregular olive-green dried oregano flakes loosely piled in a shallow cream dish on a coastal table.

Types & forms

Dried oregano leaves

Crumbled dried leaves, the subject of this guide.

Fresh oregano · comparison

A fresh herb with a different moisture content and serving texture.

Thyme or seasoning blends · comparison

Check the label: related aromas do not make these the same ingredient.

What to look for when buying

  • Choose plain dried oregano when the recipe specifies it. Check whether a product labeled kekik identifies oregano or another herb.
  • Look for dry, aromatic flakes in intact packaging; a salt-containing blend needs a different seasoning calculation.

Prepare & cook

  • Rub a measured pinch gently between clean fingers if finer flakes suit the dish. Add as the recipe directs to a sauce, marinade or seasoning mixture.
  • Use a modest amount and assess the finished flavor before increasing it. A dried herb is not a volume-for-volume equivalent of fresh leaves.

Store it well

  • Keep sealed, cool and dry, away from light and the cooker.
  • Pour out a portion away from steam instead of shaking the open jar over a simmering pan.

Substitutions depend on the dish

Fresh oregano

Use a recipe-supported amount; moisture and flavor concentration differ.

Thyme

It changes the aromatic profile. Treat it as a deliberate recipe variation, not another name for oregano.

At the Turkish table

The directory keeps oregano and thyme separate so recipes retain their intended seasoning. Shared use of the word kekik is not enough to merge their ingredient records.
