Manyas Kelle cheese
Manyas Kelle is a firm regional cheese whose scattered holes, salty bite and developed aroma make it distinctive on a breakfast plate or grated over a dish.
Last updated:
Manyas Kelle Peyniri is a registered regional cheese associated with Manyas, Bandırma and Gönen in Balıkesir. Its specification allows sheep’s milk, cow’s milk or a mixture of the two. It is a hard cheese aged in brine, with an ivory-to-pale-yellow interior, characteristic holes and a firm rind. The registered cheese is matured for at least 120 days before sale; the name does not mean every batch uses the same milk mixture.

Types & forms
Sheep’s-milk or mixed-milk cheese
Milk composition changes with the producer and season. Read the ingredient list if the milk source matters to you.
Cow’s-milk cheese
A cow’s-milk version is also within the registered specification. Compare aroma, firmness and saltiness rather than assuming all Manyas cheese is sheep’s milk.
Wedges and cut portions
The cheese is commonly sold in manageable pieces. Its holes should be visible in a cut face; portion shape alone does not establish origin.
What to look for when buying
- Look for the full Manyas Kelle Peyniri name, producer and geographic-indication information.
- Check the milk declaration, packaging and storage instructions; choose a portion size you can use as directed after opening.
- Look for the firm body and irregular holes that distinguish it from a soft white brined cheese.
Prepare & cook
- Slice thinly for breakfast or a cheese plate so its firm texture is easy to enjoy.
- Grate or crumble a small amount over pasta or vegetables when you want a salty cheese accent.
- Taste the cheese before adding salt to the rest of the dish; saltiness varies between products.
Store it well
- Keep refrigerated at 40°F or below, in its original packaging or a covered food container.
- Follow the producer’s instructions for opened packs and any supplied brine; buy a quantity you can use within those instructions.

Another hard Mihalıç-style cheese
Can give a similar firm, salty effect. Check milk and texture, and keep its own regional name rather than calling it Manyas Kelle.
A firm aged cheese for grating
A practical choice when the cheese is used as a finishing ingredient. It changes the aroma and does not reproduce Manyas’s brine-aged character exactly.
Nutrition
Nutrition varies by producer and product. Use the label on the pack you buy for its nutrition values.
At the Turkish table
Kelle refers to the head-like shape associated with the traditional draining of the curd. The cheese belongs to the wider cheese-making landscape around Manyas while retaining its own registered identity.
