Kirli Hanım cheese
Kirli Hanım gives fresh whey curd a second life as a dried regional cheese. The baked form has a browned exterior and a pale, crumbly interior suited to thin slices or grating.
Last updated:
This guide covers the Ayvalık tradition of Kirli Hanım: a whey cheese made from the liquid left after other cheeses, especially basket cheese, are produced. The recovered curd is drained, salted and dried; it may then be baked. Sheep’s-milk whey is part of the traditional account, while modern products differ, so check the milk declaration. A separate Gömeç cheese also uses the Kirli Hanım name and can be made directly from cow’s milk; it should not be assumed to be the same whey cheese.

Types & forms
Dried whey cheese
A drained, salted curd that becomes firmer as it dries. Ask the producer which finished form is being sold; this is not a home-aging instruction.
Baked Kirli Hanım
Baking gives the outside a golden-to-brown surface and a toasted flavor. The interior remains pale, with a curd texture rather than stretchy melted cheese.
What to look for when buying
- Ask for the Ayvalık whey-cheese version and check the maker’s milk and ingredient declaration.
- Read the full ingredient list: some baked versions use a wheat-flour coating.
- Buy a finished, clearly labeled product with storage directions. Surface color alone cannot establish either identity or whether a cheese is fit to eat.
Prepare & cook
- For a finished baked cheese, cut thin slices to appreciate the browned surface and curd interior.
- Grate or crumble it over pasta or salad when you want a concentrated cheese flavor.
- Follow the maker’s guidance on its rind and serving; do not treat the traditional drying process as permission to age fresh curd on a home shelf.
Store it well
- Keep refrigerated at 40°F or below, in its original packaging or a covered food container.
- Follow the producer’s instructions for opened packs and any supplied brine; buy a quantity you can use within those instructions.
Substitutions depend on the dish
Dried ricotta-style whey cheese
Can provide a firm, grateable whey-cheese texture, but it lacks Kirli Hanım’s particular drying and baked-surface character.
Fresh lor
Shares the whey-curd starting point, but is softer and wetter. It will not give the same slicing, grating or toasted effect.
Nutrition
Nutrition varies by producer and product. Use the label on the pack you buy for its nutrition values.
At the Turkish table
Kirli Hanım belongs to Ayvalık’s tradition of making use of whey from cheese-making. Drying and, for some versions, baking transform a delicate fresh curd into a more assertive table cheese.
