The Turkish pantry

Çukurören peppers

Bilecik

Çukurören peppers bring a concentrated red-pepper flavor to the pantry. Whole dried pods and stone-ground flakes connect everyday seasoning with the village’s distinctive drying tradition.

Last updated:

Çukurören Biberi is the registered dried pepper and pepper-flake product from Çukurören village in Bilecik. It comes from locally maintained Capsicum annuum seed. The peppers ripen red, are threaded whole onto cotton strings and dried; some are then ground into flakes. This identity covers those dried forms, rather than every fresh red pepper grown in Bilecik.

Types & forms

Whole dried peppers

Intact, wrinkled red pods sold loose or on strings. Their shape makes them recognizable; remove the stem before using the pepper in cooking.

Pepper flakes

The dried peppers are stemmed and stone-ground. The registered flakes have no added oil, salt or other additives. Check the pack to distinguish them from seasoned pepper blends.

What to look for when buying

  • Look for the Çukurören Biberi designation and a traceable producer; a red color or a string of peppers alone cannot prove village origin.
  • Choose dry, clean pods or free-flowing flakes. Avoid damp clumps, visible mold and insect damage.
  • Ask about pungency and start with a small amount; a regional name is not a fixed heat rating.

Prepare & cook

  • Use a small amount of flakes in soups, vegetable dishes or a finishing butter, then adjust the seasoning to the dish.
  • Remove stems from whole dried pods. If a recipe needs softened peppers, follow its soaking and cooking method rather than treating a dried pod like a fresh one.
  • Keep flakes moving when heating them in fat and avoid scorching; burnt pepper can make the whole dish bitter.

Store it well

  • Keep completely dry peppers and flakes in clean, dry, tightly closed food containers in a cool, dark cupboard.
  • Use a dry spoon and keep the container away from steam. Discard moldy dried food rather than brushing the mold away.

Substitutions depend on the dish

Plain dried red-pepper flakes

Can supply red-pepper flavor, but pungency and grind vary. They do not become Çukurören peppers simply by being dried.

Fresh red peppers

Have much more water and a different texture. They are not a direct replacement for a spoonful of dried flakes.

Nutrition

Nutrition depends on the dried form and its moisture content. Use the nutrition label of the specific whole-pepper or flake product you buy; a fresh-pepper table is not interchangeable.

At the Turkish table

Strings of red peppers are a recognizable feature of Çukurören’s seasonal food work. Keeping the whole dried pods and the ground form together helps explain why the village’s product is more than a generic spice name.
