Cooked Egg Noodles

Soft, drained egg noodles ready to fold into a stew or other cooked dish. Measure them after cooking whenever a recipe specifies a cooked amount.

Last updated:

This guide is for plain cooked Turkish egg noodles, erişte, made from wheat and egg. Their hydrated volume and weight are different from dry noodles; check the ingredient label for wheat and egg.

Types & forms

Plain cooked erişte

Short hand-cut or factory-cut noodles, cooked until tender and drained. Thickness varies between products.

Dry noodles

Dry noodles are a separate ingredient form. A cup of dry noodles cannot replace a cup of cooked noodles without adjusting the recipe.

What to look for when buying

  • Choose plain wheat-and-egg noodles and check the ingredient list; not every product sold as erişte contains egg.
  • If buying prepared noodles, check their ingredients, use-by date and storage directions.

Prepare & cook

  • Cook the noodles according to their package directions until tender, then drain. Do not assume every thickness cooks in the same time.
  • For a cooked measure, fill the measure after cooking and draining. Fold gently into the dish at the stage the recipe specifies.

Store it well

  • Refrigerate cooked noodles promptly in a clean, covered container. Keep perishable food refrigerated at 40°F or below.
  • Do not store cooked noodles in the pantry like a dry product. Follow any earlier use-by date on prepared noodles.

Other short egg noodles

Choose a similar thickness, cook and drain them first, and measure in the cooked state. The texture can differ.

Egg-free pasta

This changes the ingredient. Use it only in an intentional adaptation; do not assume the allergen or nutrition profile is the same.

Nutrition

No standardized nutrition table is provided here; noodle composition and water absorbed during cooking affect the values.
