Bluefish

Butterflied bluefish opens into an even piece for grilling. Keep the skin intact where possible and handle the fish gently when turning.

Types & forms

Butterflied fish

Opened along the body for the linked grilling method. Ask the fishmonger which bones remain.

Whole fish or separate fillets

These have different thicknesses and turning needs; adapt the method rather than copying the same timing.

What to look for when buying

  • Confirm that the fish is bluefish and ask for the preparation your recipe needs. Choose firm, properly chilled flesh with a mild smell.
  • For frozen fish, choose a sealed pack with firm frozen contents and follow its thawing directions.

Prepare & cook

  • Check for remaining bones, pat the surface dry and oil as the recipe directs. A fish basket can help keep the opened fish together on the grill.
  • Keep raw fish and its utensils separate from ready-to-eat food. Cook the thickest flesh to 145°F; check away from bones. Lemon juice is seasoning, not a replacement for cooking.

Store it well

  • Refrigerate promptly at 40°F or below and use within 2 days, or freeze. Keep wrapped in a leak-proof container away from ready-to-eat food.
  • Thaw in the refrigerator. Refrigerate cooked food within 2 hours, or 1 hour above 90°F; follow the recipe’s leftover guidance.

Substitutions depend on the dish

Another grilling fish

Match the cut and thickness as well as the flavor. Species have different fat levels and nutrition.

Smoked bluefish

Already processed and salted; it does not follow a raw-fish grilling method.

At the Turkish table

Lüfer Izgara uses butterflied bluefish cooked over heat and served simply. Opening the fish gives the recipe an accessible cooking surface without requiring thick steaks.
