Bilecik Kamber
Kamber has the outline of a small ribbed green tomato, yet belongs to an eggplant species. Its firm flesh gives Bilecik’s cooks a distinctive vegetable for frying, stuffing and pickling.
Last updated:
Bilecik Kamber Biberi, also registered as Bilecik Gavata Biberi, is Solanum aethiopicum. Despite the local pepper name, it is an eggplant relative, not a Capsicum pepper or an unripe tomato. The registered area includes Osmaneli, Gölpazarı and İnhisar districts and Çaltı village in Söğüt. The round, slightly flattened fruits are green before turning red as they ripen; their flesh is fuller than a hollow bell pepper’s.

Types & forms
Green fruit
The familiar cooking form, with a shiny skin and firm, substantial flesh. Its flavor can have a lightly bitter edge; that is not a reliable measure of chili-like heat.
Red-ripe fruit
The same fruit at a later ripening stage, with a sweeter flavor described for the local product. A red color alone cannot distinguish Kamber from a tomato or another eggplant variety.
What to look for when buying
- Ask for Bilecik Kamber or Gavata intended for food, with clear producer and origin information.
- Look for firm, unbruised, round and slightly flattened fruits with intact stems. Avoid soft, leaking or moldy fruit.
- Do not substitute an ornamental fruit or a green tomato just because it has a similar shape.
Prepare & cook
- Rinse under plain running water before cutting, then dry. Remove the stem and inspect the flesh.
- Slice for pan-frying or roasting. For stuffing, hollow the solid flesh carefully rather than expecting a bell-pepper cavity.
- For pickling, use a tested method suitable for this vegetable; do not assume a bell-pepper preserving method is interchangeable.
Store it well
- Keep fresh fruit refrigerated and protected from crushing; wash just before preparation.
- Cover cut fruit and refrigerate at 40°F or below. Follow the producer’s storage directions for a bought pickled product.
Substitutions depend on the dish
Small cooking eggplants
The closer botanical comparison, but skin, bitterness and cooking texture still differ. Adjust the preparation to the vegetable in hand.
Bell peppers
Can hold a filling in a different dish, but their hollow shape and flavor do not reproduce Kamber.
Nutrition
A complete nutrition table specific to Bilecik Kamber is not available here. Generic bell-pepper figures describe a different plant; use the label for any packaged or pickled product.
At the Turkish table
Kamber’s several names tell part of its story: a vegetable can resemble a tomato, be called a pepper and still belong to an eggplant species. It remains part of Bilecik’s local growing and pickling traditions.
