Wheat (pearled, cooked)

Tender cooked pearled wheat gives Toyga soup a rounded grain texture. It should already be cooked before joining the yogurt mixture, so the soup does not need to simmer until hard grains soften.

Aşurelik buğday is sold as dry, peeled wheat. This page covers its fully cooked form used in our Toyga soup: cook the dry grain before measuring the cooked amount. Bulgur and barley are different ingredients.

Types & forms

Cooked grains

Hydrated, tender grains ready for the soup; drain as the recipe directs before measuring.

Dry aşurelik wheat

Needs its own soaking and cooking preparation; the same weight does not yield the same amount.

What to look for when buying

  • For dry aşurelik wheat, check that the package contains wheat rather than barley or bulgur, and follow its preparation instructions. Dry and cooked weights are not interchangeable.
  • If buying ready-cooked wheat, choose plain rather than seasoned and follow its chilling and use-by instructions.

Prepare & cook

  • Cook dry grains separately until tender if the recipe starts with cooked wheat. Test several grains; a hard center will remain noticeable in a gentle yogurt soup.
  • Measure at the stage specified, then combine with the other ingredients. Follow the soup’s gentle heating and stirring method for the yogurt.

Store it well

  • Cool cooked wheat promptly in a shallow container and refrigerate covered. Use within three to four days, or freeze suitable portions.
  • Thaw frozen portions in the refrigerator and keep the finished dairy soup chilled after serving. Do not store a large warm pot at room temperature.

Substitutions depend on the dish

Another cooked wheat preparation

Only after checking grain texture and seasoning; cracked precooked bulgur behaves differently.

Pearl barley

A different grain with a different texture; using it changes the recipe, and any dietary suitability needs its own ingredient check.

At the Turkish table

Toyga recipes documented in Türkiye combine prepared wheat with yogurt and often chickpeas. Regional versions differ; this guide follows the cooked wheat ingredient in the linked recipe.
