Types & forms

Granulated sugar

Small dry crystals that dissolve into syrup.

Icing sugar · comparison

Much finer and may contain starch; not identical by volume.

What to look for when buying

  • Choose plain granulated sugar for the halva syrup.
  • Keep the packet dry and check that it is not a flavored sugar or sugar substitute.

Prepare & cook

  • Weigh the recipe amount before combining with liquid.
  • Handle hot syrup carefully; follow the recipe’s order when adding liquid to hot flour and butter.

Store it well

  • Store airtight away from moisture and insects.
  • Use a clean dry scoop; keep strongly scented items away from the container.

Substitutions depend on the dish

Honey or a liquid sweetener

Changes liquid content and flavor. Use a recipe designed for that sweetener rather than replacing equal weights blindly.

At the Turkish table

Our flour halva uses granulated sugar dissolved in water. Its amount and the liquid ratio help determine the final texture.
