Choose tender zucchini and manage its moisture for better fritters, sautéed dishes and stuffing.

Zucchini is a summer squash, also called courgette. Green zucchini is distinct from cucumber and winter squash.

Tender skin and small seeds; useful sliced or grated.
Bigger seeds and a different texture; may suit stuffing or grating after preparation.
A stored form that releases water as it thaws; drain before using in a suitable recipe.
Another tender summer squash changes color and possibly texture. Check tenderness rather than copying a time blindly.
Cucumber is not a dependable substitute. It has a different texture; use a fritter recipe developed for the vegetable you have.
