Yufka sheets

Thin, round wheat yufka sheets form the layers and rolls of börek. Keep the sheets covered while working, spread the filling evenly and use the recipe’s moisture and fat to avoid dry seams.

Thin round wheat sheets for börek. Thickness and moisture differ from dried flatbread, pastry-thin baklava filo and ordinary sandwich wraps.

Thin pale round yufka sheets stacked on a cloth, with the upper edges folded back.

Types & forms

Round börek sheets

Flexible sheets that can be layered or cut into wedges for rolls. Check their size before dividing the filling.

Baklava filo or dried yufka

Different thickness or moisture; neither is automatically a sheet-for-sheet replacement.

What to look for when buying

  • Choose intact sheets that separate without crumbling. A chilled product should be properly refrigerated, with undamaged packaging.
  • Read whether the package is fresh, frozen or dried and follow its instructions. Check wheat and any other listed ingredients rather than assuming every yufka is identical.

Prepare & cook

  • Set out the filling and working tools before opening the package. Keep unused sheets covered so their edges remain flexible.
  • Distribute filling without overloading one area. Brush or moisten as the recipe directs, then fold or roll gently; excessively wet filling can tear the sheet.

Store it well

  • Reseal unused sheets promptly and follow the package’s refrigeration and use-after-opening directions. Do not leave fresh sheets exposed until they become brittle.
  • If the product allows freezing, wrap tightly and thaw as directed before separating the layers. Filled börek needs storage appropriate to its meat, cheese or vegetable filling.

Substitutions depend on the dish

A different börek yufka size

Adjust the cut and filling distribution; count alone does not establish an equivalent amount.

Very thin filo

Needs an adapted layering method and moisture balance, not an automatic one-sheet swap.

At the Turkish table

Yufka belongs to a shared flatbread-making tradition. In these recipes, the practical focus is börek: a spinach tray bake, a coiled meat pastry and small cheese rolls.
