Sea bream

A deep-bodied whole çipura suits baking or grilling. Choose the size the recipe expects and have the fishmonger finish the cleaning before you cook.

Last updated:

Raw gilthead sea bream, Sparus aurata, scaled and gutted with gills removed. Çipura is a specific sea-bream species, not a name for every fish sold as bream. Whole-fish weight includes the head and skeleton.

Types & forms

Cleaned whole çipura

An oval, laterally flattened fish with its bones and skin retained for whole-fish cooking.

Fillets

Different yield and thickness; use a fillet-specific quantity and method.

Farmed or wild-labeled

Production information should come from the label or supplier, not the picture; neither label alone certifies sustainability.

What to look for when buying

  • Ask for Sparus aurata/çipura, with scales, gills and viscera removed. Similar-sized fish help portions cook at a comparable rate.
  • Choose chilled, firm fish with a mild smell and sound skin. Confirm whether frozen fish has already been cleaned rather than discovering this after thawing.

Prepare & cook

  • Check the cleaned cavity, pat dry and follow the recipe for seasoning and any cuts in the skin. Keep raw-fish utensils away from ready-to-eat sides.
  • Bake or grill according to the whole-fish recipe. Check the thickest flesh away from the backbone reaches 145°F; size and thickness matter more than copying a time from a fillet.
  • Remove the skeleton and check for smaller bones as you portion it. A whole fish is not a boneless serving simply because the flesh lifts away easily.

Store it well

  • Keep raw fish in a leakproof container at 40°F or below and use within 1–2 days, or freeze promptly. Follow an earlier use-by date. Thaw in the refrigerator, keeping drips away from other food.
  • For vacuum-packed fish labeled to remain frozen until use, remove it from the vacuum bag before refrigerator thawing. Follow the package instructions; a sealed thawing bag is not a substitute for this step.
  • Divide cooked food into shallow containers and refrigerate within 2 hours, or 1 hour above 90°F. Use refrigerated cooked fish, meat or broth within 3–4 days; reheat leftovers to 165°F. Follow a shorter recipe-specific limit where given.

Substitutions depend on the dish

Whole European sea bass

Can fill a similar whole-fish role in a suitable recipe, but body shape and thickness differ. Check cooking independently.

Other sea bream species

Confirm the actual species and use its appropriate recipe. The shared English word bream does not prove an identical ingredient.

At the Turkish table

Et ve Süt Kurumu records çipura as a fish used for grilling and baking in Türkiye. Our fırında çipura is one whole-fish example; this guide does not repeat historical abundance claims or rank regional catches.
