Cucumber (Persian)

Small, crisp Persian cucumbers give cacık and chopped salads a fresh crunch. Their tender skin can usually stay on; cut evenly and manage excess liquid so the finished dish does not become watery.

Last updated:

Fresh Persian cucumber, a small thin-skinned cucumber type. It is separate from pickled cornichons and does not mean every small cucumber cultivar is identical.

Types & forms

Fresh whole cucumbers

Firm cucumbers for slicing, dicing or grating; inspect the ends and skin before cutting.

Pickled cucumbers

Acidic, salty preserved vegetables with a different role from fresh cucumber.

What to look for when buying

  • Choose firm cucumbers with sound skin, without soft ends or leaking patches. Size alone does not establish the variety.
  • Buy only what you can keep fresh; thin skins do not protect the flesh from drying indefinitely.

Prepare & cook

  • Wash under running water before trimming. Keep tender skin if desired; peel any unpleasantly tough areas rather than automatically removing it all.
  • For cacık, grate or dice as the recipe asks. For shepherd’s salad, make even pieces and dress near serving; drain excess liquid when the recipe calls for it.

Store it well

  • Keep cucumbers refrigerated and protected from drying. Store cut pieces covered and separate from raw meat or seafood.
  • Refrigerate yogurt-based cacık promptly; do not treat a mixed dairy dish as a shelf-stable cucumber preserve.

Substitutions depend on the dish

Another tender salad cucumber

Can work after checking skin and seeds; use the amount in the recipe, not an assumed one-for-one count.

Cornichons

Add pickle acidity and salt and are not a substitute in ordinary cacık.

At the Turkish table

The linked recipes use fresh cucumber in two different ways: cooling yogurt cacık and a chopped tomato-and-cucumber salad.
