Types & forms

Home-cooked white beans

Cook thoroughly before weighing the drained portion.

Canned white beans

Already cooked; compare drained weight and added salt.

What to look for when buying

  • For a quick piyaz, choose plain canned white beans rather than beans in sauce.
  • Avoid leaking, swollen or badly damaged cans; check the ingredient list and drained quantity.

Prepare & cook

  • Drain canned beans and rinse if appropriate for the recipe.
  • If starting with dry beans, use a reliable bean-cooking method and cook until tender throughout; soaking alone is not cooking.

Store it well

  • Refrigerate promptly in shallow covered containers at 40°F or below; use within three to four days.
  • Store unopened cans as directed and keep leftover beans refrigerated after opening.

Substitutions depend on the dish

White mature beans boiled without salt. Canned salted products and different varieties can differ; dry weight is not cooked weight. Values are rounded for readability; “not reported” does not mean zero. A “<” value is below the source’s measurement limit.

At the Turkish table

Cooked white beans are the base of our Antalya-style tahini piyaz. Tahini dressing is added after the beans are cooked.
